Scored, trimmed, seasoned, smoked for 4-6 hrs, glazed, wrapped for take out. This fan favorite can feed 2 - 4 people per rack hitting the pit at ~11 lb. Spare ribs are more meaty, fatty, larger, and include cartilage.
